This vibrant carrot salad is crunchy, tangy, slightly sweet, and packed with fresh flavor. There’s no cooking required, making it an easy recipe for busy days. It can be served immediately, but letting it rest in the refrigerator allows the flavors to blend beautifully.
Ingredients
- 1 kg fresh carrots
- 1 red bell pepper, finely chopped
- 1 small onion, finely chopped
- 3–4 cloves garlic, minced
- ½ cup vegetable oil
- ¼ cup vinegar
- 1–2 tablespoons lemon juice
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon paprika
- ½ teaspoon ground cumin
- ½ teaspoon black pepper
- ½ teaspoon chili flakes, optional
- 2–3 tablespoons chopped fresh parsley or cilantro
Step 1: Prepare the Carrots
Wash and peel the carrots.
Using a box grater or food processor, grate the carrots into thin strips. Place them in a large mixing bowl.
Step 2: Add the Vegetables
Finely chop the red bell pepper and onion.
Add them to the grated carrots along with the minced garlic and chopped parsley or cilantro.
Toss everything together.
Step 3: Prepare the Dressing
In a separate small bowl, combine the vegetable oil, vinegar, lemon juice, sugar, salt, paprika, cumin, black pepper, and chili flakes if using.
Whisk until the ingredients are well combined.
Step 4: Combine Everything
Pour the dressing over the carrot mixture.
Using clean salad utensils, toss thoroughly so the dressing coats all the carrots and vegetables.
Step 5: Let the Flavors Develop
Cover the bowl and place it in the refrigerator for at least 1–2 hours.
For a stronger flavor, allow it to rest overnight. Give it another good toss before serving.
Step 6: Serve
Transfer the carrot salad to a serving dish and garnish with a little fresh parsley or cilantro.
Serve it as a side dish with grilled chicken, roasted meat, sandwiches, rice, or other main dishes.
Storage
Keep the salad refrigerated in a clean, covered container. For the best quality, enjoy it within several days.
Important: Because this is a fresh, no-cook refrigerator salad rather than a tested canning recipe, it should remain refrigerated and should not be stored at room temperature or treated as shelf-stable canned food.
